Chocolate Truffles

Today I would like to share with you one of my personal favourite Christmas recipes.  I began making these chocolate truffles when I was 12 years old and just learning to cook.  My family loved them and very quickly they were adopted as part of our Christmas Eve celebrations.

Back in those days I used to make these truffles with butter, sugar and dairy milk chocolate.  Today I have adapted the recipe so that they are just as delicious as ever but can also be made dairy, gluten and/or sugar free.

The reason that this sort of cooking is so good, is that you can easily ‘throw’ things in without having to measure things precisely.  Even your kids can get involved in making these.

I recommend that you try these Christmas truffles and let me know what variations you come up with…

Ingredients

Melt together:
100 g butter (or coconut oil)
2 tablespoons honey
1/3 -1/2 cup cocoa (or carob)

To this liquid, add approximately:
½ cup oats (or buckwheat flakes)
½ cup chocolate chips (or cacao nibs)
Handful of coconut flakes
Handful of chopped nuts and seeds
Handful of raisins (or goji berries)

Instructions

Mix all the ingredients together until you have a chocolate, fudgy-type consistency.  

And now for the finishing touches…  From this mixture, you can make either chocolate squares or chocolate balls as explained below.

To make chocolate squares: Either pour or press your mixture into a tin.  Sprinkle generously with coconut, chopped up nuts or goji berries.  Freeze until firm and then cut into squares.

To make chocolate balls: Roll the mixture into balls with moist hands and dip in a bowl of either coconut, cacao powder, finely chopped nuts or goji berries.  Put them on a plate and pop them in the freezer until they become firm.  Once frozen transfer to the fridge.

All that is left to do is enjoy! If you want them to last I advise hiding them, as they are very tempting and may mysteriously disappear…
