The other night I was looking to prepare something especially nice to have for breakfast the next morning.

As I was due to go grocery shopping, I was rather low on my my usual breakfast staples and my cupboards were looking a little bare...

But, fortunately, the one thing that I did have on hand, was a big container of chia seeds.

Chia is an ancient grain that has been eaten for centuries, dating right back to the Aztecs and the Mayans. It is rich in micronutrients and high in essential fatty acids and amino acids, making it an excellent breakfast choice.

You can make a delicious chia pudding by mixing chia seeds together with any liquid of your choice. You really can use a wide variety of liquids including water, nut milk, or fresh juice, or a combined mixture, as you fancy. Be adventurous and experiment with different flavorings. Try also using fresh berries, vanilla, orange zest, stewed apple, mashed or sliced banana and cinnamon.

Here is the recipe for the 'Raspberry Chia Delight' pudding I made the other day...

Ingredients

1/3 cup chia seeds
1 cup of oat milk (or any dairy free milk)
1/2 cup almond milk
1/2 cup of fresh apple juice
1/2 cup rolled oats
1/3 cup coconut
1 tsp cinnamon
3/4 cup frozen raspberries (or any fresh fruit of your choice)
1 tsp natural vanilla essence
Handful of sunflower seeds
Handful of cacao nibs (for decoration)
Handful of coconut (for decoration)

Instructions

Stir everything together in a big bowl. Next, add the cinnamon, pure vanilla, coconut, raspberries (or other fruit of your choice).

Check for consistency. You want the mixture to be quite sloppy but not runny. Adjust by adding more milk or oats as necessary.

Leave this mixture overnight, or for at least 10 minutes. This will give the chia seeds adequate time to expand, becoming jelly-like and your pudding will begin to thicken. Left to soak, the sunflower seeds will also soften, assisting with digestion and absorption of all the essential nutrients.

When ready to serve, decorate with the cacao nibs and coconut on top of the chia pudding.

Another wonderful addition to this recipe is coconut yogurt and/or mashed banana.
