Well over the weekend I was in creative mode... and I found myself lost in time in the kitchen creating some divine, luscious and healthy creations that I reckon will be just perfect for your next dinner party....And not only did they look awesome but they tasted fantastic! And I thought you might enjoy them too.

So here's the recipe so you can quickly whip them up at home for yourself. Let me know how you get on with them and any variations you come up with. Leave me a comment, I really do LOVE to read your replies! :)...

Ingredients (for 1 stuffed capsicum)

1 - 2 big coloured capsicum or pepper (seeds removed)
1 tsp tamari, braggs liquid amino acids or soy sauce (if using soy sauce check the label that it has no MSG.)
1/2 big organic carrot (grated)
1/2 zucchini or courgette (grated)
1/4 red onion (finely chopped)
1/2 - 1 juicy tomato (all chopped up fine) - optional
1/4 cup extra virgin olive oil
A good squirt or 2 of fresh lemon juice to taste
1/4-1/2 tsp maldon sea salt (the real stuff, not iodised table salt)
1/4 tsp freshly ground pepper
1/2 clove garlic (finely chopped)
fresh herbs to decorate (I used fresh parsley)

Instructions

Assemble the dish by placing the capsicum in the middle of the plate. Sprinkle over the tamari/liquid amino acids or soy sauce in the base of the capsicum.

Then mix together all the ingredients for the filling. Taste. Season with a little more salt or lemon juice if needed. Then scoop the filling into the capsicum and pile high. The trick to this is making sure you have a solid wide base at the bottom. I pressed the filling quite firmly into capsicum then kept adding more and more filling!

Once finished sprinkle over the fresh herbs at the end and splash a little bit of olive oil on the plate for the "oh la la professional" effect and ENJOY!
